Beef Butchery Masterclass:
6pm – 8pm
Start the evening with a drink and tour of the Farm Shop and find out what goes on behind the scenes, learning about our unique dry-aging process inside our bespoke Himalayan Salt brick lined aging chamber.
First you will watch our Master Butcher break down a body of beef into primal cuts, learning about the hindquarter and forequarter the process if breaking them down and what cuts are produced, and their uses along the way.
You’ll then focus on the forequarter, finding out about the different cuts and the butchery processes used. Now, pair up and get your knives ready! You’ll be butchering neck and clod, learning how to remove bones and prepare it ready to be made into minced and diced beef which you’ll get to take home.
Next, you’ll work your way around a shin of beef, boning and rolling. Here you’ll learn one of the most essential skills – the butcher’s knot, you’ll be split into teams and go head-to-head in a butcher’s knot contest! You’ll also get to take home some of the shin you have prepared.
Then, you’ll be learning about steaks: Watch our Master Butcher break down the rump and loin into primal cuts, preparing the sirloin and boning out the rump. You’ll get some steak to take home and enjoy too.
As the evening comes to an end, you’ll get the opportunity to ask any questions you may have.
