Pork Butchery Masterclass:
6pm – 8pm
Start the evening with a drink and tour of the Farm Shop and find out what goes on behind the scenes, learning about our unique dry-aging process inside our bespoke Himalayan Salt brick lined aging chamber.
First, you’ll watch our Master Butcher break down a side of pork, learning all the different cuts and what they are used for. You’ll then have a go at scoring the loin and cutting some pork chops.
Next you’ll be given a shoulder of pork, cutting off the hand and boning out ready to be made into sausages. You’ll then use your skills to bone out the collar and score. Next, you’ll bone out, trim and roll the pork shoulder – ready for the oven. You’ll also make some diced pork from the shoulder, to take home too.
Don’t forget the butcher’s knot! Here you’ll learn one of the most essential skills – the butcher’s knot, you’ll be split into teams and go head-to-head in a butcher’s knot contest!
As the evening comes to an end, you’ll get the opportunity to ask any questions you may have.
